HARVESTING AND VINIFICATION: Mechanical harvest of the grapes followed by a soft pressing process, clarification of the must and inoculation of yeasts. Fermentation takes place in stainless steel, at a controlled temperature, for
about 10 days. All procedures are carried out in a completely oxygen-free atmosphere to protect the integrity of the wine. The only adjuvants used in these processes are CO2 and nitrogen.

STOPPER AND BOTTLE: Technical stopper derived from sugar cane. It is
used to enhance the oxygen post-bottling control in order to protect the wine aromas from oxidation and to optimise wine style.
